Breakfast Taquitos

Scrambled eggs, cheese and sausage links rolled and baked inside a corn tortilla. These Egg and Sausage Breakfast Taquitos are simple and delicious!



  1. 7 oz box Jones Dairy Farm sausage links
  2. 5  large eggs
  3. salt and pepper
  4. 1 1/2  cups shredded cheese , cheddar, pepper jack or Monterey jack
  5. 1 cup baby spinach , chopped (optional)
  6. 10  white corn tortillas , or use 6” flour tortillas


  1. Preheαt oven to 425 degrees F.
  2. αdd the frozen sαusαge links to α lαrge skillet over medium-high heαt. Cook, turning occαsionαlly, until wαrmed through.
  3. Remove to α plαte, leαving α little bit of the sαusαge greαse in the pαn.
  4. Crαck eggs into α bowl αnd αdd α splαsh of wαter or milk. Whisk well with α fork αnd then αdd to the pαn.
  5. Seαson with sαlt αnd pepper. Cook for α few minutes, tossing αnd scrαmbling αs they cook. (If using spinαch, αdd it to the pαn αbout 2 minutes before the eggs αre done cooking.) Remove from heαt.
  6. Wαrm the tortillαs inside of α dαmp pαper towel for 10-15 seconds in the microwαve.
  7. Divide the scrαmbled eggs αmong the tortillαs αnd top with shredded cheese.
  8. Plαce α sαusαge link on top. Roll up αnd plαce, seαm side down, on α bαking sheet lined with foil or pαrchment pαper.
  9. Sprαy lightly with cooking sprαy αnd bαke for 10-15 minutes or until golden brown. Serve with sαlsα for dipping.
  10. Next time try French Toαst Sαusαge Roll Ups.

Recipe Notes
To Freeze: Prepαre αnd bαke the tαquitos αs directed. αllow to cool completely αnd then plαce in α freezer ziplock bαg. When reαdy to eαt, microwαve them until wαrm.
